Bring the feeling of the great outdoors to your holiday cuisine with these festive vegan chocolate pinecone brownies! They’re made with your favorite brownie mix, coconut oil, sliced almonds, flax, with an optional snowy garnish of powdered sugar.
Vegan Gluten-Free Pinecone Brownies Recipe |
Equipment: – 8×8 Baking Pan or Dish – Parchment Paper |
Ingredients: – Your favorite packaged brownie mix (gluten free optional), or mix your own – 2 tsp Coconut Oil – 1 Egg or Flax Egg (1 tbsp ground flax + 2 tbsp water) – 1 Cup Sliced Almonds – Vegan Chocolate or Dark Chocolate chips or chunks – White Chocolate chips or chunks (optional) – 1/2 tsp mint extract (optional) – Powdered Sugar (optional) – Shredded Coconut |
Instructions: Making the Brownie Cones 1. Grease an 8×8 pan with coconuto oil. Bake your brownie mix in the 8×8 pan according to the package instructions. If it calls for egg, use the egg replacer for a vegan option. Melted coconut oil can substitute butter, and milk can be substituted with your favorite vegan nut milk. 2. Before the brownies fully cool down (but isn’t too hot to handle), scoop out golf-ball sized scoops from the brownie, and form in your hands into a cone shape. Decorating the Brownies 3. Stick the almond flakes facing diagonally up all around the cones (like in the picture) 4. Place the cones on parchment paper in a baking pan or dish, and place them in the freezer for 1 hour. Dipping in Chocolate 5. Melt chocolate chunks with your preferred method – either in a bowl in the microwave for 30 seconds, or by double boiling it in a pot. Careful not to burn the chocolate! 6. After the chocolate is melted, carefully put 1/2 tsp of mint extract and mix thoroughly. You can add more or less depending on how minty you want it to taste. 7. Take the frozen pine cones out of the freezer and dip or drizzle each on with chocolate. Place the brownies back on the parchment paper. Garnish & Presentation (optional) 9. Garnish with powdered sugar, shredded coconut, and/or drizzled white chocolate. 10. Place on a festive plate, surrounded by pine tree sprigs and real pinecones! |
